this is a product that i can't even explain how good it is. really. its basically everything leftover form the pig. ears, tails, feet, whatever. so flavorful, i refer to it as liquid sausage. but better.
at sweatmans just after the last of the hogs had been pulled off. pretty amazing. this guy was awesome, he was more than happy to show us everything.
this on a sandwich. southern food heaven. i am going to make a dish around this. be on the lookout.

look at this plate. it says it all. hash pork mustard cole slaw ribs. this makes me want to curl up into the fetal position just thinking about how good it is.
