so i did a dinner last night and actually remembered to take pictures for once. not in this exact order but you get the picture. the dinner was based more off of italian style as thats what was asked so this is what i came up with. keep in mind i cooked and plated alone for 10 people. ridiculous but fun.
celery root. thickened celery juice. meyer lemon.
wild steelhead. pesto. gnocchi. raw zucchini.
polenta. truffle. 63.5 egg. fontina.
whole roasted john dory.
john dory. olive oil. fluer de sel. meyer lemon.
clam risotto.
beet. gorgonzola. almond. grapefruit. sherry agro dolce.
wandering the forest. rabbit. glazed carrot. black truffle cocoa chive focaccia soil. pine.
wild boar. red wine. orange. gremolata. tagliatelle.
a7 wagyu sirloin. brocoli puree and stalk. cippolini. poached prune puree.
chestnut cream. poached pear. chocolate. hazelnut oil powder. caramel and hazelnut brittle powder. chicory meringue. mint. raw hazelnut.
not pictured. violet pop rocks palette cleanser.
